Every family has a black sheep, the wild child who doesn’t conform or take the traditional path; but if you have the courage to get to know one, they’re usually a lot of fun.
This "Black Sheep" is an experimental coffee defined by its complex and extreme processing: a 30-day anaerobic fermentation, followed by drying to 35% moisture, an additional sealed 20-day fermentation, and a final drying to 11% moisture. This experimental approach unlocks a new horizon of flavor possibilities and underscores the value of experimentation in advancing flavor development, marketability, and sustainability for smallholder farms.
