This honey-processed coffee is sourced from a local co-op in Menglian, an autonomous region named after its indigenous people groups: Menglian Dai, Lahu, and Va.
The processing method involves careful steps: cherries are sorted and floated before being pulped. They are then bed-dried with frequent turning and temperature monitoring. The honey process is inherently messy due to the initial sugary stickiness, which persists until the sun achieves sufficient drying for better movement.
This particular lot was subjected to comparatively less initial fermentation. The result is a smooth, stable flavor profile complemented by a creamy mouthfeel.
