The Taferi Kela lot was community-harvested and processed at Bette Buna's washing station. Ripe cherries were de-pulped, wet-fermented 24–36 hours in concrete basins (low-oxygen/not fully anaerobic), washed to remove defects, and dried 8–15 days on raised, covered beds. After moisture stabilized, the coffee rested in parchment for at least eight weeks before dry milling. Post-hulling, it was hand-sorted, screened, and color-sorted at Bette Buna’s dry mill in Gelan before export.
Finca Colomba has been in the Adolfo family for three generations. Adolfo McEntee inherited properties on the Santa Ana Volcano slopes in 1949 and planted Bourbon coffee trees at Finca Colomba and Finca San Francisco. His son, José Adolfo MCentee Batlle, inherited and continued the legacy, passing it to his son, “Fofo.”
