The Misty Valley Natural Yirgacheffe offers a new take on a classic origin. Producers in the Gedio region have reinvented the traditional Ethiopian natural process, resulting in a coffee with exceptional fruitiness, complexity, and character. This coffee, developed with the expertise of exporter and producer partner Abdullah Bagersh, receives extraordinary care throughout its journey. The process begins with the ripe cherries being brought to raised African beds for drying. Crucially, they are constantly turned—day and night—for the first 48 hours to ensure even moisture evaporation. This diligent attention lends consistency and cleanliness to the cup, mitigating the risk of uneven circulation common in natural processing. Once fully dried, the skin, mucilage, and parchment are removed, and the coffee is sorted and traded as a Grade 1 Yirgacheffe through the Ethiopian Coffee Exchange.
